I have perfected a copycat KFC coleslaw recipe that tastes just like the one from Kentucky Fried Chicken. It took me a while to get it right, but now I can make it at home whenever we crave it. If you’re short on time, you can use a bag of pre-shredded slaw mix, although grating it yourself gives the best results.
Ingredients:
- 4 cups finely shredded cabbage
- 1/4 cup shredded carrots
- 1/4 cup diced onions
- 1/4 cup granulated sugar
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 2 tablespoons white vinegar
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a large mixing bowl, combine the shredded cabbage, shredded carrots, and diced onions. Toss the ingredients together until they are well mixed.
- In a separate bowl, whisk together the granulated sugar, mayonnaise, buttermilk, white vinegar, lemon juice, salt, and black pepper. Mix until the sugar is dissolved and the dressing is smooth and creamy.
- Pour the dressing over the cabbage mixture. Use a spatula or large spoon to gently toss and coat the vegetables evenly with the dressing. Ensure that all the cabbage and carrots are well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight. This resting time allows the flavors to meld together and for the coleslaw to become chilled and crisp.
- Before serving, give the coleslaw a final toss to ensure the dressing is evenly distributed. Taste and adjust the seasoning if needed by adding more salt, pepper, or sugar according to your preference.
Coleslaw Tips:
- Finely shredding the cabbage ensures a delicate and manageable texture for the coleslaw. You can use a sharp knife or a mandoline slicer for best results.
- Shredded carrots add a touch of sweetness and vibrant color to the coleslaw. You can use a grater or buy pre-shredded carrots for convenience.
- Dicing the onions finely ensures that their flavor is distributed evenly throughout the coleslaw. You can use yellow or white onions, depending on your preference.
- Adjust the amount of sugar according to your taste preference. KFC’s coleslaw has a slightly sweet flavor, but you can decrease or increase the sugar to suit your preference.
- It is important to use buttermilk in the dressing as it adds a tangy flavor and creamy consistency. If you don’t have buttermilk, you can make a substitute by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
- Chilling the coleslaw for a few hours or overnight allows the flavors to develop and the vegetables to become crisp and refreshing.
- Ensure that the coleslaw is well covered with plastic wrap or stored in an airtight container in the refrigerator to prevent any cross-contamination or absorption of other odors.
- The coleslaw can be stored in the refrigerator for up to 3-4 days. Give it a toss before serving if any dressing has settled at the bottom of the bowl.
Enjoy your Copycat KFC Coleslaw, a classic and creamy side dish that pairs well with fried chicken or any summer barbecue!
