Copycat KFC Coleslaw

I have perfected a copycat KFC coleslaw recipe that tastes just like the one from Kentucky Fried Chicken. It took me a while to get it right, but now I can make it at home whenever we crave it. If you’re short on time, you can use a bag of pre-shredded slaw mix, although grating it yourself gives the best results.

Ingredients:

  • 4 cups finely shredded cabbage
  • 1/4 cup shredded carrots
  • 1/4 cup diced onions
  • 1/4 cup granulated sugar
  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 tablespoons white vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large mixing bowl, combine the shredded cabbage, shredded carrots, and diced onions. Toss the ingredients together until they are well mixed.
  2. In a separate bowl, whisk together the granulated sugar, mayonnaise, buttermilk, white vinegar, lemon juice, salt, and black pepper. Mix until the sugar is dissolved and the dressing is smooth and creamy.
  3. Pour the dressing over the cabbage mixture. Use a spatula or large spoon to gently toss and coat the vegetables evenly with the dressing. Ensure that all the cabbage and carrots are well coated.
